A delicious date and walnut cake, inspired by Burglar Bill and adapted from a recipe on BBC Good Food. Fill and top the cake with Recipe for Cream cheese frosting

Ingredients
- 200g dates, stones removed, roughly chopped
- 30g unsalted butter
- 240ml boiling water
- 1 tsp bicarbonate of soda
- ½ tsp salt
- 1½ tsp mixed spice
- 200g coarsely chopped walnuts
- 225g self-raising flour
- 140g dark soft brown sugar
- 2 large eggs, beaten
- 150ml semi-skimmed milk
Method
- Combine the dates, butter and bicarbonate of soda in a bowl.
- Pour over the boiling water and stir until the butter melts. Leave to cool.
- Preheat the oven to 180ºC (fan 160ºC, gas mark 4)
- Line and grease a 2lb loaf tin
- Combine the eggs and sugar in a separate bowl and add the milk
- Add the dates into the eggs & sugar, including all remaining liquid
- Gradually sift the flour, mixed spice and salt into the egg, sugar and date mix
- Add the walnuts and mix thoroughly
- Transfer the mixture to the prepared tin
- Bake in the centre of the oven for 1h 15m or until a skewer comes out clean
- Remove from the tin and leave on a wire rack to cool
