Ingredients
- 2 tbsp butter
- 350g macaroni
- 1 garlic clove finely chopped
- 1 tsp English mustard powder
- 2-3 tbsp plain flour
- 500ml whole milk
- 250g mature cheddar grated
- 50g Parmesan
- 1 mozzarella ball
Method
- Get pasta cooking and preheat the oven to 180°C (fan)
- Melt butter in large pan, add garlic, mustard powder, cook for about 1 minute
- Add the flour, stir well for about another minute
- Slowly add the milk and heat gently to form a sauce
- Add the grated cheese and half of the mozzarella ball
- Stir until all the cheese has melted
- Add a little more milk if it’s too thick
- Remove from the heat and stir in the cooked pasta
- Top with grated cheddar and the rest of the mozzarella in chunks
- Cook in the oven until the top starts to brown, around 30-40 minutes
