Macaroni cheese

Ingredients

  • 2 tbsp butter
  • 350g macaroni
  • 1 garlic clove finely chopped
  • 1 tsp English mustard powder
  • 2-3 tbsp plain flour
  • 500ml whole milk
  • 250g mature cheddar grated
  • 50g Parmesan
  • 1 mozzarella ball

Method

  • Get pasta cooking and preheat the oven to 180°C (fan)
  • Melt butter in large pan, add garlic, mustard powder, cook for about 1 minute
  • Add the flour, stir well for about another minute
  • Slowly add the milk and heat gently to form a sauce
  • Add the grated cheese and half of the mozzarella ball
  • Stir until all the cheese has melted
  • Add a little more milk if it’s too thick
  • Remove from the heat and stir in the cooked pasta
  • Top with grated cheddar and the rest of the mozzarella in chunks
  • Cook in the oven until the top starts to brown, around 30-40 minutes
