A recipe for a plain and simple sponge cake.

Cooking Time: 25 mins
Ingredients
- 4 large eggs
- 225g caster sugar
- 225g self-raising flour
- 2 tsp baking powder
- 225g unsalted butter
Method
- Preheat the oven to 180ºC (fan 160ºC, gas mark 4)
- Grease and line two 20cm (8“) sandwich tins
- Sift the flour & baking powder into a bowl, set aside
- Combine the sugar and butter with an electric whisk
- Gradually add the eggs and continue to mix
- Finally, add the flour & baking powder
- Pour the mixture into the prepared tins
- Bake in the centre of the oven for 25 minutes, or until golden brown and coming away from the edge of the tins
