A recipe for a plain and simple sponge cake.

Preparation Time: 10 mins
Cooking Time: 25 mins

Ingredients

  • 4 large eggs
  • 225g caster sugar
  • 225g self-raising flour
  • 2 tsp baking powder
  • 225g unsalted butter

Method

  • Preheat the oven to 180ºC (fan 160ºC, gas mark 4)
  • Grease and line two 20cm (8“) sandwich tins
  • Sift the flour & baking powder into a bowl, set aside
  • Combine the sugar and butter with an electric whisk
  • Gradually add the eggs and continue to mix
  • Finally, add the flour & baking powder
  • Pour the mixture into the prepared tins
  • Bake in the centre of the oven for 25 minutes, or until golden brown and coming away from the edge of the tins
